Vitesse 1 pendant 7 minutes \/ vitesse 2 pendant 7 minutes.<\/p>\n<p>Le pointage dure de 1 \u00e0 2 heures, le temps que la pate double de volume<\/p>\n<p>On d\u00e9gaze sans \u00e9craser la p\u00e2te puis on proc\u00e8de au fa\u00e7onnage. (\u00e0 ce stage, on peut mettre au froid).<\/p>\n<p>L&rsquo;appr\u00eat est la deuxi\u00e8me phase de pousse (1 heure).<\/p>\n<p>Avant la cuisson, on humidifie le pain et on le grigne (lame rasoir).<\/p>\n<h3>Cuisson<\/h3>\n<p>230\u00b0 ou 250\u00b0 pendant 20-25 minutes.<br \/>\nLe pain cuit sonne creux.
